Organic Grass Fed Regenerative Osso Buco Style Shank

These little organic grass fed beef shank steaks (aka Osso Bucos) are a  3/4" thick cut that has bone in the middle (marrow included) surrounded by shank meat. The ossos are individually packed and vacuum-sealed. They come as a 3 lb, 5 lb, or 10 lb set (you can select your option). Ossos tend to vary a bit in size, but expect about 4-7 individual ossos in the 3 lb package, 6-8 in the 5lb package, and about 12-17 in the 10 lb package. While we only ship out inspected & well sealed packages, due to the bone in nature of this cut we cannot guarantee that the packaging will be in perfect condition on arrival at its destination. They are one of our favorite cuts to use in a beef stew, as they bring the best of both worlds: a meaty exterior that breaks down wonderfully into tender stew meat, and a bone-in interior that creates incredible broth and releases all the health benefits found in bone broth.
