Roasted sweet potatoes, black beans, corn and onion sautŽed in a red enchilada sauce with Mexican cheese blend, wrapped in corn tortillas and topped with the red enchilada sauce. Ready to bake at 350ûF for 20-30 minutes until sauce is bubbling. If you prefer a vegan version which has no cheese, please select the Vegan Tray option in the dropdown. This dish is also freezable.
