
Taco Soup
A southwestern style soup with a light chili flavor that tastes just like a taco but with none of the heat. Very mild and very tasty. Just add hamburger, tomato sauce, and water. Directions: Bring 3-4 quarts of water to a boil in large stock pot (3 quarts for thick soup, more for thinner soup). In meantime, brown 1 lb. ground beef in skillet, drain fat. Stir soup mix packet into drained beef and mix well. Add beef mixture to boiling water along with one 15 oz. can tomato sauce. Simmer for approximately 15-20 minutes longer until rice is done. Ladle into soup bowls, garnish with shredded cheddar or mozzarella cheese. Serve with your favorite cornbread, crackers or tortilla chips. Yields 14 cups.
