2016 Vietti Castiglione, Barolo DOCG, Italy Grapes: 100% Nebbiolo Winemaking: The grapes are selected from smallvineyards spread in the Barolo region. The vines arebetween 9 and 42 years old, planted in a clay-limestonesoil. Plants are trained with guyot method, with an averagedensity of roughly 4500 units per hectare. All the differentcrus are vinified and aged separately with slightly differentprocesses to underline the singular characteristics ofeach parcel and terroir. Fermentation occurs in stainlesssteel with daily cap submersion for extraction of flavor andcolor. Aging: The wine is aged for roughly 30 months in oakcasks and barriques; all parcels are then carefully blendedbefore bottling. Food Pairings: Hearty stew, wild game, roasted redmeats and cheeses.
