Gel food colors are used to create paint palette dots below the stencil or on separate cookie sticks.   It is so easy to color in the outlines of the cookie.  Simply dip a paintbrush in water, swirl onto the colored dots to pick up the food coloring, then paint within the lines of the cookie. To prevent black outline smudging, spray your cookies with PME Clear Glaze after the black outlines ar dried.  This seals the outline and prevents water from smudging the outline, making for a more fun craft project.
