Iapetus Wine "Substrata" 2021

The 2021 Substrata is a lean-bodied, hybrid blend of 80% Louise Swenson and 20% Itasca.  Fermented with native yeast in a combination of stainless steel and neutral Hungarian oak barrels, it strikes a precarious balance between breadth and angularity. Regular battonage and malolactic fermentation counter the its inherent acidity, offering something at once unusually delicate and powerfully present. The nose is defined by lemon cream, coconut, and honeydew melon. The palate follows, with tropical fruit, tart lemon, and mineral pithiness.
