Coquelicot Vineyard, Santa Ynez AVA Ambyth Estate Sauvignon Blanc underwent a gentle foot pressing and fermented with its skins in a combination of Italian terracotta amphorae and stainless steel tanks over a period of 9 months. Following the fermentation process, the wine was separated from the skins and allowed to settle for a month before being bottled in alignment with the descending moons. In keeping with a natural winemaking philosophy, nothing was added to the wine. ABV: 11.9%
