90% Colombard, 10% Moscotel, direct pressing using a basket press for gentle extraction. After pressing, the juice settles in stainless steel containers for 1-2 days before being racked into neutral 225-liter French oak barrels for alcoholic fermentation, which typically requires 2-3 months depending on vintage conditions. Malolactic fermentation follows in the same vessels, after which the wine ages on its lees for 6-7 months. The finished wine is then racked and blended in stainless steel, allowed to precipitate once more, and bottled without filtration with a minimal 10ppm sulfite additionÂ
