The name `Mistral` pays homage to the prevalent northern wind in the region. Crafted from organically cultivated vines, ranging from young to 40 years old, primarily Grenache, with some of the oldest vines owned by vigneron Philippe Bravay. These vineyards are situated on sandy slopes between Châteauneuf and Orange. Philippe selectively destems 10-50% of the grapes based on the vintage. The vinification and ageing take place in concrete tanks, without racking or blending, and sulphur is abstained from until the bottling stage.
