We are eating many different dishes and it wraps itself around the flavors of each, amplifying and mixing the food with its own voice. Calabrian cauliflower, forbidden rice and salmon, Mac and cheese, salad with sasame miso all work. Still pale golden. Candied lemon nose. Continually shifting. Layers within layers of texture. Like a fractal. The finish is so long sometimes I forget I had a sip minutes ago and it’s still going. This is a real treat. 5/12/2024
