Apium graveolens. 100-150 days. Celery root is a super storage vegetable for the colder climates to have throughout the winter! We roast it, grate it in salads, add it to soup and stuffing. This is a scab resistant improved Giant Prague type we picked up while apprenticing at Meadowlark Hearth.
