Led by the husband-and-wife team of Jacqueline and Dan Person, the winery focuses exclusively on méthode traditionelle sparkling wines made from coastal sites and intended to be enjoyed young, bright, and full of life. ‘Urchin’ captures the Carboniste ethos: fresh, expressive, and built for good times. WINEMAKER: Jacqueline & Dan Person FARMING: Organic Practices VARIETY: 75% Pinot Noir, 25% Chardonnay TERROIR: Cool climate sites across California, selected for freshness and natural acidity VINIFICATION: Grapes are whole-cluster pressed to preserve purity and focus. Native yeast fermentation occurs in barrel, followed by spontaneous malolactic fermentation. The 2023 vintage continues the extended barrel aging introduced in 2022 to build depth, while a shortened tirage preserves vibrancy.
