Heron Cabernet Sauvignon, California 2022

Winemaker: Laely Heron Farming: Organic Variety: Cabernet Sauvignon Terroir: Most of the Cabernet Sauvignon for this bottling comes from Paso Robles.  Vinification: Grapes picked ripe at 24 brix and are destemmed directly to tank. They spend a 48-hour cold soak before fermentation, where 3 pump overs per day are performed for 10 days.  Aging: The finished wine is aged for 10 months in a combination of neutral and new French oak barrels.  Tasting Note: Deep plum with brick red tinge. Ripe dark cherry, cedar, sandalwood, pomegranate undertones. Complex cherry flavors, dried herbs, caramel, and the warm subtle vanilla of French oak. A silky and supple finish with nice length.
