PB & Jam: Peanut Butter & Strawberry Jam Cookie (Vegan Friendly, Gluten Sensitive)

As red blooded Americans, we couldn't pass up this opportunity to wed our incredible (and shockingly vegan and gluten-sensitive) peanut butter cookie with the jam made by our friends at Columbus Food Rescue. And, because of who Dee is as a person, we couldn't leave it at simply sandwiching the dough with jam. So, we crush freeze dried strawberries into our classic peanut butter cookie dough, made a scoop, hollow the center, fill it with chilled jam, close the scoop, and bake it.
