The XM in this special edition stands for xtra mature agaves and xtra madera wood fermented artisan practices. More specifically the agaves used here were exclusively from the last field of 8 year-old agave in all of Jesus María all with an extremely high sugar content due to the old age of the plants. Then the 30% fermentation, as opposed to zero wood ferment on the normal high proof, further exentuates and builds on the added complexity and luxurious feel of this super special tequila. Extremely limited release.
