Use instead of white or brown sugar in any recipe, as a garnish on fruit, yogurt, oatmeal and baked goods, or to balance spicy heat in stews and curries.The jaggery starts with fresh cane, juiced and boiled down to a syrup in traditional iron pots, clarified using wild okra, and then whipped by hand to produce light, crunchy crystals.
