The 2019 Kilchoman STR Cask Matured is a limited-edition Islay single malt, crafted using a process developed by Dr. Jim Swan, where casks are shaved, toasted, and recharred. This expression, drawn from 43 casks filled in 2012 and bottled at 50% ABV without chill filtration or coloring, is limited to 14,500 bottles. On the nose, it reveals summer fruits, cinnamon spice, toffee, and gentle peat. The palate unfolds with soft caramel, red berries, lemon tart, and earthy peat smoke, leading to a long, spicy finish balanced by honey and caramel.
