Colonel E.H. Taylor Single Barrel Color: Butterscotch. Nose: The nose is very pleasant with notes of vanilla and butterscotch. Fresh fruit notes of apple, pear, and cherry also shine through. The nose is very crisp and refreshing. Palate: On the palate, the butterscotch and cherry notes carry over from the nose, but a ton of spice becomes apparent as well showcasing itself as cinnamon, allspice, and nutmeg. There is also a fair amount of sweet oak on the palate. The bourbon has a medium viscosity. Finish: This single barrel has a medium finish as it moves down the palate and up the roof of your mouth. The butterscotch, cinnamon, and just general crispness of the bourbon really shine. One of the real fathers of bourbon is Edmund Haynes Taylor Jr. He was adopted by his uncle, Edmund Haynes Taylor Snr., who rechristened him as his junior, after becoming an orphan at the age of five in 1830.
