Domaine Servin, Chablis 1er Cru Butteaux, 2019

Butteaux is a respected Premier Cru within the broader Montmains sector of Chablis, known for producing slightly fuller, more structured wines, thanks to its clay-limestone soils and cooler exposition. Domaine Servin, one of the oldest family domaines in Chablis, farms this site traditionally, offering a style that marries old-school texture with bright, modern precision. The 2019 vintage was warm but balanced, and this wine shows the results: generous fruit—lemon curd, white peach, and green apple—balanced by flinty minerality and crisp acidity. A portion of the wine sees time in neutral oak barrels, which adds a whisper of roundness without dulling the signature Chablis tension. It’s a wine that can be enjoyed now for its brightness, but also has the depth to age 5–7 years, gaining more savory and honeyed complexity over time.
