The true essence of Kilchoman. After a lengthy slumber of 124 years, the Island of Islay finally woke up to a new distillery in 2005. Anthony Wills, the visionary Kilchoman Founder, and his wife Kathy set out to resurrect the grassroots tradition of farm distilling, creating a rare breed among Scottish distilleries. Kilchoman is one of only six still using traditional floor maltings and the only one completing the entire Whisky-making process on Islay, from growing barley to bottling. Even Kilchoman's signature style is a bit of a rebel compared to its Islay brethren — though it packs a peaty punch of around 20 PPM, it's the bright, zesty citrus notes that really make it shine. It's one of the smallest Scotch distilleries, producing a mere 120,000 liters per year, but if you ask us, that only adds to its artisanal charm.
