Age of vines: 40 years Farming: Dry-farmed. Organic. Ploughed by horse. Harvest: By hand Vinification: Two-week maceration, followed by pressing using large wooden basket press. Spontaneous fermentation with indigenous yeasts, without any manipulation whatsoever. No fining. No filtration. Aging: 48 months in demi-muid (600L barrel). Bottled November 7, 2023. Sulfur added: None   Notes: From a particularly warm vintage, this cuvée is opulent, rich and refined, with a vague memory of tannins due to longer aging in barrel. A rare wine. Excellent for gastronomy.
