No destemming. Vinification: Direct press of whole clusters. Chardonnay blended directly with Mauzac following pressing to referment. Spontaneous fermentation with indigenous yeasts. No fining. No filtration. Aging: 11+ months in stainless steel (4+ years for the Chardonnay). Bottled May 19, 2022. Sulfur added: None Production: 6,100 bottles   Surprisingly complex for a majority Mauzac cuvée, with an aromatic nose and white floral and pear notes on the palate. Brindezingue: an outdated, familiar term meaning “drunk” or “a little crazy.”
