100% Maybe Grignolino? (Fabio doesn`t want to say...) Fabio: "The sugar is so you can drink this in the morning and fight a shark." The grapes are destemmed and given a four to twelve hour maceration. Fermentation and aging are in demijohn and homemade porcelain jars for three months. Intentionally bottled with residual sugar so that there is a nice sparkle.
