Organic Pinot Noir grapes were harvested by hand. Whole bunch maceration in concrete tank before fermentation with indigenous yeast in old barrels. Aged in old oak barrels. No filtration, fining or added sulphur. Pinot from older vines (70 years on average) from Dandelion's Goutt d'Or - bigger, darker in style, and can definitely age a little.
