Jamie is treating us to a trip to Mexico, right from the Gourmet Chef kitchen! We’ll be enjoying Pozole Rojo, a traditional Mexican holiday soup made with braised pork and hominy, served in a spicy chili broth, Tacos de Baccalao, a classic holiday dish made with cod stewed in a Vera Cruz tomato sauce, served Cabo Fish Taco Style, Tamales de Rajas con Queso, where strips of Poblanos, Chicken, and Oaxaca Cheese are steamed in a Corn Husk and topped with Salsa Verde & Mexican Crema, and finishing with Pastel de Elote, a Sweetened Cornbread Cake served with Cinnamon Ice Cream, Caramel, and Candied Corn Kernels.
