Neversink Spirits, Select Cask Finished Bourbon Whiskey

Neversink Spirits' Select Cask Finished Bourbon Whiskey is a meticulously crafted spirit that harmoniously blends traditional bourbon characteristics with unique finishing techniques. Distilled in Elmsford, New York, this wheated bourbon features a mash bill of 60% corn, 20% winter wheat, and 20% malted barley, all sourced from New York-grown grains. The grains are milled on-site at the distillery, then mashed and fermented in stainless steel before undergoing double distillation in a hybrid pot and column still, resulting in a flavorful, grain-forward spirit.  The bourbon is aged for a minimum of two years in new charred American oak barrels, utilizing 30 and 53-gallon casks to impart rich flavors of spice and vanilla. Following this initial maturation, the whiskey is finished in Neversink's own Apple Brandy casks, which previously held their Apple Apéritif—a New York interpretation of the French classic, Pommeau.
