Neversink Spirits New York Dry Gin, affectionately known as "The Pigeon," is a bold, juniper-forward gin that pays homage to classic dry gin styles while incorporating unique botanicals. Crafted in Elmsford, New York, this gin is distilled from a base of 100% New York-grown corn, providing a clean and neutral canvas for its vibrant botanical profile.  The gin features a distinctive blend of botanicals, including juniper, bergamot orange, apple blossom, cubeb, lemon, orange, cassia, cardamom, coriander, angelica, and orris. Juniper is macerated in the base spirit overnight, followed by vapor infusion of the remaining botanicals during distillation in a hybrid pot and column still. The result is a robust and cocktail-friendly gin, brimming with zesty citrus, uplifting spice, and soft, tea-like floral undertones.
