The ULTRA Brut Nature is the top sparkling wine offering from BARTH winery. Its balanced profile showcases elegant aromas of apple peel, gooseberries, red fruit, and cream. The extended aging process imparts a subtle spiciness from the lees, resulting in a distinguished presence and a long-lasting, refined effervescence. The base wine used in Barth Ultra NV, 750ml is a 2014 Pinot Noir Blanc de Noir. It undergoes traditional bottle fermentation and is left to rest on lees for 72 months before being hand-riddled and disgorged, without any dosage added. This extended maturation on lees adds a rich fullness and distinct yeasty taste, as well as phenolic complexity. The wine is further matured in large oak barrels for added depth and weight. The ULTRA Brut Nature, with its strength and vigor, complements tangy and flavorful dishes such as Vitello Tonnato, as well as rich Saltimbocca and Cordon Bleu recipes.
