Chuck steaks are steaks from the popular and flavorful chuck roast. Like the roast, this dry-aged steak shines brightest when cooked on low heat over time. We like to start with a nice sear by cooking well-seasoned chuck steaks in a heavy cast iron skillet with a little avocado oil and butter on a ripping hot setting. Once seared, drop the heat to medium-low and cook with the lid on until medium-rare. Let rest (Always!) with a pat of salted butter on top. It's our favorite way to eat these amazingly wonderful nuggets of grass-finished goodness!  This amazing recipe from Marion's Kitchen combines Chuck Steak and Short Ribs in one incredible mouth-watering Chinese Braised Beef Noodle dish.  A must-try!
