For every status you need custom timeline, you should have a tag with the number of days. For example if you have a status 'Preparation', then you would have a tag in a product like "preparation:3" which means that status will take to 3 days to be fulfilled. When an order has 2 products with different timelines, the timeline will default to the longer one.
