Variety: Chardonnay, Sauvignon Blanc & Aligote The future Alice and Olivier de Moor met at enology school in Dijon. Alice hailed from Jura and Olivier was a Chablis native. When they met they already had a lot in common, being both from wine regions whose family participated in the industry. However, their commitment to sustainable farming and low intervention winemaking was a commonality they didn’t share with all of their classmates or fellow future vignerons. That commitment got them certified organic in 2005, after doing small changes like harvesting in smaller vessels to minimize damage by the grapes crushing themselves in big vats. They use gravity and  later invested in a pneumatic press to ensure the gentlest pressing possible. At no point have they used SO2.
