The grapes come from the "El Cuadarado" Estate located in the historic Balbaina Alta estate. It is considered one of the estates with the greatest high influence of all the estates in Jerez Superior. The must obtained from this estate has perfect characteristics for breeding Manzanilla and it comes largely from its peculiar salinity. The wines enter our soleras dating back to 1792 and are three years in the Bodega de San Fermín in the lower district of Sanlúcar where the exposure to the river is direct.
