Summary: Natural still red wine made high-altitudePinot Noir. Grape: 100% Pinot Noir Farming: Organic, Yield: 5 hL/Ha, 20 year-old vines Region: Ainata, Bekaa Valley, 1800m Soil: Limestone ABV: 13%, Sugar: 1g/L PH Level: 3.26, SO2: 6 PPM Winemaking: De-stemmed by hand. Half whole berry fermented, half crushed. Fermented in stainless tanks. Aged in Lebanese amphora for one year, and in bottle for a year before release.
