With a slightly more bitter and sharp edge than most Wisconsin made sharp cheddar's, you will find this piece attempt to recreate a flavor profile similar to a sharp cheddar that has a terroir of the Vermont region. To match this taste you will also find this piece to have the characteristic white color of that of a Vermont cheddar. Age: 18 month - 24 months Body: Low moisture body that is firm and sometimes crumbly when cutting. Perfect for a charcuterie boards and other tasteful pairings.
