This 100% Baberba comes from Nadia Verrua of Cascina ‘Tavijn, whose family has been growing wine in Monferrato for over a century. The grapes are harvested by hand and ferment with wild yeasts before aging for two years – first in concrete, then in neutral oak. This wine is a funkier take on a classic Piedmont wine, rich with brambly fruit, a wisp of smoke, earthiness, and fine tannins on the finish. Medium-bodied with vibrant acidity and some funk, this wine can stand up to a flavorful pairing, like a mortadella pizza or tagliatelle con prosciutto.
