Cremant de Bourgogne is literally just sparkling Burgundy wine, made with Chardonnay and Pinot Noir just like the still wines. Simmonet-Febvre dates back to the 1840s, but today is owned by famed negotiant Louis Latour. They make wine in large quantities, but the quality is always there. Their well-known rosé, regarded for its deep, beautiful Burgundy color, has always been a banger for the price.
