Alipus San Juan del Rio is crafted with agave Espadin. The company works with Joel Antonio Cruz and his younger cousin Rodolfo Juan Juarez, who took over distillation a few years ago. Its unique flavor is due to the reddish and white soils where the agave is grown and its prolonged fermentation process, giving this mezcal a mineral and chalky taste.
