Convite Coyote is crafted with wild maguey Coyote (Agave Americana) which take an average of 12 years to mature. The agave is cooked in an underground pit oven, milled using a traditional tahona powered by a horse, naturally fermented with spring water, and then double distilled in a copper alembic still.
