Sugar Topped Dream Scone Mix

What could be better than perfectly warm, crispy and fluffy scones with a crackle sugar topping? We have made these for over a decade for clients from all over the world and now you will too!  Makes 8 scones with crackle sugared tops. 440g You will need: 1 stick of very cold unsalted butter (113.5 g or ½ cup) cut into ½ inch cubes  ¾ cups plus 2 tbsp of heavy cream or ¾ cups buttermilk  1-2 bananas of any ripeness, in ½ inch slices,  3 tbsp of coarse or granulated sugar if desired
