Alaska Wild Salmonberry Jam

Salmonberries, related to raspberries, are found in coastal Alaska and Canada. This delicious jam contains 50% berries, sugar, wildflower honey, lemon juice, Pomona's pectin, calcium, and citric acid. Pectin is necessary for salmonberry to gel, but a low-sugar pectin is used to keep the proportion of sugars down. It does contain seeds, though approximately 2/3 of them have been filtered out.
