The wine is made entirely from Nebbiolo grapes grown in vineyards situated in the hills of Monteu Roero (Occhetti & Bric Rossino-Vadonia) & Vezza d’Alba (Sanche), which are located at an altitude of 260-280 meters and have sandy soil. The grapes are handpicked and fermented with natural yeast in concrete tanks. The traditional maceration process involves a floating cap and lasts for 12-14 days. Malolactic fermentation occurs in both wood and steel, and the final wine is aged for 7 months in a combination of old wood and steel. A beautiful new discovery from Roero thanks to Stelle Wine Co.
