Marchand-Tawse is the collaboration of two Québécois: Pascal Marchand, who has lived and worked in Burgundy for three decades - and Moray Tawse. Their Bourgogne Blanc is chardonnay from limestone-rich soils in Savigny-lès-Beaune, Pernand-Vergelesses, and the Hautes Côtes de Nuits. Fermentation and 15 months of élevage were in used oak barrels. The resulting wine is just 12% alcohol and amazingly fresh and refreshing. It has creaminess and complexity without any excessive weight or oakiness. The wine finishes with a lean streak that emphasizes its vibrancy. Drink it with scallops, salmon, and other rich fish dishes, braised fennel, or chicken pot pie.
