Combine all ingredients with a food processor or electric mixer. Wrap and refrigerate for at least three hours. (The flavor gets better over time). Form into one or two logs or balls and roll into chopped walnuts or pecans, and/or chopped fresh parsley, or freshly cracked peppercorns. Serve with crackers or melba rounds. This herb cheese is also delicious without a topping.
