Traditional vinification Grapes are sorted and de-stemmed after the harvest with each vineyard parcel being vinified separately. Wine is fermented in stainless steel with daily punch-downs; fermentation lasts anywhere from 15 to 18 days. Wine is blended in January and aged in foudre and 1-2 years in old barrels from Bordeaux grand crus.This wine displays a deep ruby-color, with a jammy cherry and new saddle leather-scented nose, this medium-bodied, ripe, attractive, concentrated wine exhibits fine balance, soft tannins, and a velvety finish. Fun Fact: In 1325 Cahors was the table wine of Pope John XXII.
