
Pops' Pepper Patch Beet Bombs
These "Beet Bombs" are our spicy version of the Pickled Baby Beets and are easily enjoyed straight from the jar or mixed into your favorite salad. Create the perfect Charcuterie Board for your next gathering with these and make sure to include our Pops' Habagardil Pickles, Pops' Blackberry Bourbon Chutney, and Pops' Red Pepper Jelly. Size: 16oz Pops' Beet Salad w/ Lemon Vinaigrette1lb of Beet Bombs or Pickled Baby Beets, chopped1 cup English Cucumber, chopped5 Green Onions, sliced thin1/2 cup Carrots, shredded1/2 cup Yellow Pepper, chopped1/2 cup Shallot, chopped1/4 cup Radish, chopped fine3/4 cup Fresh Parsley, chopped fine3 tbsp Olive Oil3 tbsp Fresh Lemon Juice2 tsp Lemon Zest 1 Garlic Clove, minced1/4 tsp Sea Salt, fine Make the Lemon Vinaigrette first by combining and whisking the olive oil, lemon juice, lemon zest, garlic, and sea salt. Mix all the remaining salad ingredients with the vinaigrette and enjoy.
