Davide Vignato Col Moenia is a white wine from the Gambellara region in Veneto, Italy. The vineyards are situated on volcanic, basalt-rich soils at an average altitude of 250 meters, providing a unique mineral character to the wine. This cuvée is crafted exclusively from 100% Garganega grapes, sourced from vines averaging 40 years in age. The grapes are hand-harvested in mid-October, ensuring optimal ripeness. Fermentation occurs spontaneously with indigenous yeasts without the addition of sulfur. The wine matures on its fine lees in stainless steel tanks for seven months, undergoing periodic bâtonnage to enhance texture and complexity. Bottling is done without fining or filtration, adhering to natural winemaking principles.
