Lemon Zest Glazed Cookie

Soft, delicately sweet lemon cookie with a sharp zing of lemon zest layered throughout the vanilla-glazed icing.    Why Lemon Zest Glaze? Growing up as my family's in-house baker, it was my Dad who had the (very difficult) job of taste-testing and "rating" all of my baked creations.  His rating process would start with the raw dough and would end with a bite of my freshly baked treat.  The rating system's highest mark was an exuberant "A+!
