This is not the industry standard- imported fish is heavily used in most sushi kitchens. Chain of Custody - Our relationships with local fishermen allows us to preserve complete chain of custody for most fish. We unload the fishing boats ourselves using our drivers and trucks. The fish arrives at our Boston Fish Pier headquarters and is meticulously cut and processed for onsite. No middle men here.
