Metaphysical Mango is a testament to fresh fruit and house cultures. After a brief stint in an oak foeder—with an acidic assist from some Lactobacillus and Brettanomyces—this sour siren dove deep into a sea of mango for a year, adopting a fruit forward persona. Like biting into the flesh of a ripe, fresh mango, backed by a medium acidity. Light bodied, golden colored, with slight haze from the massive mango addition.
