Fischer's gleaming, penetratingly mineral Wachau-designated Grüner Veltliner Federspiel comes from three parcels along the Danube's southern banks, whose north-facing slopes produce wines of scintillating acidity and laser-like precision. This wine spends eight months on its lees in stainless steel following a spontaneous fermentation, and malolactic fermentation is never blocked (and occasionally takes place).
